Hot & Skinny Spinach Artichoke Dip



One of my FAVORITE apps is Spinach and Artichoke dip. So I've made a "skinnier" recipe than adding in all the fat and cheese usually included and replaced it with a little spice. This recipe is a great add to my other fav, whole grain tortilla chips!


Hot & Skinny Spinach and Artichoke Dip

Servings: 15 • Serving Size: 1/4 cup
Calories: 73.3 • Fat: 4.4 g 
Carb: 3.4 g • Fiber: 0.9 g 
Protein: 5.2 g • Sugar: 0.6 g
Sodium: 244.7 g





Ingredients:
  • 16 oz (2 bricks) 1/3 less fat cream cheese
  • 14 oz artichoke hearts packed in water, drained
  • 10 oz frozen spinach, thawed and squeezed
  • 1/4 cup chopped shallots (optional)
  • 2 cloves garlic, minced
  • 1/2 cup fat free Greek yogurt
  • 3 tbsp grated parmeasan cheese
  • 1 1/2 cups shredded part skim mozzarella cheese
  • 1/2 tsp black fresh pepper
  • 1/8 tsp crushed red pepper flakes

In a bowl, mix the cream cheese and yogurt. Chop the garlic and artichoke hearts. Drain and squeeze the spinach.

Combine all the ingredients in a medium pan and turn burner on low. Put in cream cheese yogurt mixture, artichokes, spinach, cheese and seasonings and continue stirring until desired consistency.

Can be made one day in advance and stored in the refrigerator. Reheat slowly on stove or in crockpot.
