Eat wise and drop a size by Thanksgiving!

Skinny Chicken Bruschetta

I was ready for a night of chicken but I was craving a new way to make it. On top of that I was fixated on the less is more approach and wanted to use things I had lying around and needed to use up some cherry tomatoes. Enter chicken bruschetta!

Both of us enjoyed it. The flavor was soft but delicious! I did substitute the balsamic vinegarette for a red wine vinegarette (that's all I had) but it proved to a good alternative. This is easy and time can be reduced by grilling instead of baking! Give it a whirl!


Ingredients
  • 3 or 4 chicken breasts
  • 4 or 5 small tomatoes, chopped
  • 1 clove garlic, minced
  • 1/2 small red onion, chopped
  • 1 tsp. olive oil
  • 1 tsp. balsamic vinegar
  • 1/8. tsp sea salt
  • Handful basil, chopped
Instructions
  1. Preheat oven to 375 degrees F (if you choose to bake your chicken rather than grill). Sprinkle some salt and pepper over top, cover and bake for about 35 to 40 minutes (depending on the size of your breasts) until juices run clear.
  2. Meanwhile, combine chopped tomatoes, garlic, onion, olive oil, balsamic vinegar, sea salt and basil in a bowl. Refrigerate until chicken is ready to be served and spoon over top of the chicken. Enjoy!

Advocare Meal Replacement SNACKS

As a mother I'm always looking for ways to get "healthy" into snacks. Not to mention that I myself get bored of the same old routines. I took one of my favorites, the AdvoCare Meal Replacement Shake mix and started searching for ways I could use all the benefits of the nutrition and 1:1 protein to carb ratio and put it into something new and attractive enough to a 7 year old!

First experiment was combining fall elements with the Pumpkin Protein Cookies. Indulge in this delicious fall treat without feeling guilty!


Pumpkin Protein Cookies
1 cup pumpkin puree
1/4 cup applesauce
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1 egg
1 tbsp molasses
2 T honey or Agave nectar
2 cups rolled oats
1/2 cup raisins
Preheat oven to 300 degrees. Combine ingredients in a bowl, stirring until well combined. Drop cookies onto baking sheet. Bake for 15-20 minutes. Makes appx 12 cookies.
Per Serving: 111 calories, 20 carbs, 2 fat, 5 protein, 16 sodium, 3 fiber


The second experiment was a new breakfast version of banana oatmeal muffins. These delicious morning treats are great for grabbing on the way out the door or for a kid friendly breakfast! Both my daughter and I give them two thumbs up! Note: I didn't use blueberries but they were yummie without.




AdvoCare Meal Replacement Muffins 
1 Egg 
1 Ripe Banana 
1 tsp vanilla 
1/2 cup plain yogurt blueberries to taste 
1/2 cup oats 
3 tbsp coconut oil (can use vegetable oil as well)
1/4 cup whole wheat flour 
3 tbsp honey 
Mix all the muffin ingredients together, then pour in greased muffin tin or with paper cups.
Bake at 350 degrees for about 15-20 minutes. (Mine were in for 20)

Grilled Cheese for Grown Ups!

Grilled cheese sandwiches were always a favorite comfort food growing up. Always homemade, they were my favorite. My daughter loves them as well but I can't always bring myself to have just cheese, and especially just Velveeta at that. While cheese isn't the "cleanest" food, moderation is key and there are always some alternatives.
With every meal I try to keep the nutrients plentiful and the taste flavorful! 
So ditch the Velveeta and give these grown up sandwiches a try!



Here is my favorite recipe but feel free to modify!

  • Whole wheat flat bread - 100 calories
  • Avocado spread on one side- 20 calories
  • Laughing cow swiss cream cheese (1/2 triangle) - 15 calories
  • Tomatoes (3 cherry halves)  - 5 calories
  • Onion - 7 calories
  • Spinach - 6 calories
  • Feta cheese crumbled- 47 calories
  • Grilled on a Foreman

Hot & Skinny Spinach Artichoke Dip



One of my FAVORITE apps is Spinach and Artichoke dip. So I've made a "skinnier" recipe than adding in all the fat and cheese usually included and replaced it with a little spice. This recipe is a great add to my other fav, whole grain tortilla chips!


Hot & Skinny Spinach and Artichoke Dip

Servings: 15 • Serving Size: 1/4 cup
Calories: 73.3 • Fat: 4.4 g 
Carb: 3.4 g • Fiber: 0.9 g 
Protein: 5.2 g • Sugar: 0.6 g
Sodium: 244.7 g





Ingredients:
  • 16 oz (2 bricks) 1/3 less fat cream cheese
  • 14 oz artichoke hearts packed in water, drained
  • 10 oz frozen spinach, thawed and squeezed
  • 1/4 cup chopped shallots (optional)
  • 2 cloves garlic, minced
  • 1/2 cup fat free Greek yogurt
  • 3 tbsp grated parmeasan cheese
  • 1 1/2 cups shredded part skim mozzarella cheese
  • 1/2 tsp black fresh pepper
  • 1/8 tsp crushed red pepper flakes

In a bowl, mix the cream cheese and yogurt. Chop the garlic and artichoke hearts. Drain and squeeze the spinach.

Combine all the ingredients in a medium pan and turn burner on low. Put in cream cheese yogurt mixture, artichokes, spinach, cheese and seasonings and continue stirring until desired consistency.

Can be made one day in advance and stored in the refrigerator. Reheat slowly on stove or in crockpot.

1/4 cup Orange Juice Frozen Concentrate 
1/2 – Banana-Medium 
1/4 cup Whole frozen Strawberries 
3 – Ice Cubes 


Orange Julius: Pour all ingredients in blender: ¼ c. plain Greek Yogurt, ¼ C. nonfat milk, 1 heaping Tbs. OJ concentrate, 1 Tbs. Vanilla extract, 1 orange sliced, 1 Advocare Vanilla Meal Replacement Shake, Ice.


Banana Split Smoothie
1 Banana-Medium 
1/2 cup Low Fat Greek Vanilla Yogurt
